The example of the meal prep client is inspiring - that he was able to find the customers after the initial hypothesis testing! For me, the challenge is to actually choose the simple offer to test. I work in sustainability innovation - my clients are B2B and I feel that if I approach them with only one offer to test, I may lose them because they may need something else (which I can also provide, but they don't know it). But I also feel that being afraid of narrowing down the niche doesn’t work in my favor - the offer is not specific and a bit abstract. As a multi potential generalist I’m struggling with that. I am curious to understand how to test and clarify a B2B offer in this case.

I work with a lot of people in my mentoring sessions on this exact thing. In your case I would go to market and have as many conversations as you can with people who fit your target client avatar. Instead of going in and selling a defined offer, I'd lead with open ended questions like "what problems are you experiencing in the. business right now?" and "what's on your roadmap for the next 6-12 months?". The goal is discovery, and to uncover opportunities that you can add value. Then you can sell yourself in as the solution to their problems, or as someone who can help them complete a body of work. This is a particularly good strategy if you're open to fractional work. Have you tried something like this?
